Ingredients :
- 2/3 Cup Butter (softened to room temp)
- 1/3 Cup Granulated Sugar
- 1/2 Cup Brown Sugar
- 1 Large Egg
- 1 Teaspoon Vanilla
- 2/3 Cup Peanut Butter
- 1 & 2/3 Cups Plain Flour
- 1/2 Teaspoon Baking Soda
- 1/2 Teaspoon Baking Powder
- 1/2 Teaspoon Salt
DO NOT use an electric mixer! This recipe turns out much better when hand mixed.
1. Mix Butter & Sugars until smooth (do not over mix). 2. Add in Egg & Vanilla and mix well. 3. Add Peanut Butter and blend well. 4. Dump in the first cup of flour, but do not mix. 5. Take the 2/3 cup of flour and add the Baking Soda, Baking Powder & Salt and then add it to the batter. 6. Mix until the flour is well-incorporated into the batter.
Put batter in a buttered cake pan. Bake on 350 degrees for about 15 to 20 minutes or until a toothpick inserted in the middle comes out clean.
