I've been thinking of going back to eating a basically vegetarian diet for some time. We have been off our Veggie diet for about 2 years now and I have to say, I miss it. I felt better when I had fresh fruit for breakfast instead of cereal with milk.
So, after doing some research online, I decided to try my own version of a homemade veggie burger. It did turn out quite good. We used black beans, sauteed mushrooms & onions and some dried herbs for the paste. The kiddos enjoyed them - although my oldest, Caleb, did say he prefers a real meat burger.
Can't wait until tomorrow to try some other veggie meal ideas.
