Not Exactly Short Cake Strawberry Shortcake


Strawberry Cake is my husband’s favorite dessert. He doesn’t care for frosting or super-sweet desserts, so for Father’s Day, we’re making it just the way he likes it !

Strawberries :

  • 1 pint Fresh Strawberries 
  • 4 Cups Water 
  • ½ Cup Granulated Sugar 
  • ¼ Fresh Lime

Cake Ingredients :

  • 2 Cups All-Purpose Flour 
  • 1 Cup Granulated Sugar 
  • ½ Cup Butter (Room Temperature) 
  • 1 Cup Milk 
  • 3 ½ Teaspoons Baking Powder 
  • 1 Teaspoon Salt 
  • 1 Teaspoon Vanilla Extract 
  • 3 Eggs (Room Temperature)

 First, prepare the strawberries. Cut strawberries into slices (removing leaves & stems), place in pot with Water & Sugar & fresh lime juice (just squeeze the lime over the strawberry mixture). Let simmer for about 1 hour or until thoroughly cooked. Stir & check often. Once the mixture becomes kind of syrup-like, they’re done. Set aside. 

Now it’s time to make the cake. 

Preheat oven to 350 degrees. Grease & flour a round baking pan.
Mix flour, baking powder & salt in a bowl and set aside.
Cream together sugar & butter. Add the eggs one at a time, beat well. Alternate adding the flour mixture & the milk. Make sure all ingredients are well incorporated, then add the Vanilla & mix well once again.

Pour into greased, floured pan. Place a water bath in the oven beside the cake.

Bake for approximately 40 minutes. All ovens are different, so keep a check on your cake. All cooking times are estimates.

Once the cake is cooled, slice the top off and set aside. Spread half the strawberries over the bottom half, then place the top back on and spread the other half of the strawberries over the cake. Place in fridge for an hour or serve up right away.

My cake in the photo was a bit thin because my spring form pan leaked a little out. This may only be enough for a one layer cake. Please, keep this in mind when preparing this recipe.


My husband enjoyed his Father's Day cake very much.
